South Korea’s weather agency says late November will be the best time in Seoul for this year’s “gimjang” or kimchi-making season.
 
The Korea Meteorological Administration (KMA) said on Thursday that the most suitable weather conditions for the capital and the central part of the country will be the last ten days of this month.
 
Early and mid-December has been projected as the best time for gimjang in the southern provinces and coastal areas along the East Sea, while mid- to late December was projected as the right time along the southern coast.
 
The weather authority says the best time for gimjang is when morning lows fall under zero degrees Celsius and daily average temperatures remain under four degrees Celcius.
